Is there a way to colorize/theme/style the ribbon besides the PopularApplicationSkins merge?

Yes, you can retemplate the Ribbon just like you would any other WPF control.

Some examples would be nice, or how the default templates look like. How to guess what the properties and 'PART_' definitions are?

You can view the default templates using Reflector with the BamlViewer add-on:
- Reflector can be installed here: http://www.red-gate.com/products/reflector/
- The BamlViewer add-on can be found here: http://www.codeplex.com/reflectoraddins/Wiki/View.aspx?title=BamlViewer&referringTitle=Home

You'll want to look at themes/generic.baml.  You can tell what parts of the Ribbon the different styles are for by looking at the TargetTypes.  You'll probably have to do a bit of trial and error to get the look you want.  If you have trouble finding a particular visual that you want to retemplate, let me know and I can try to help locate the appropriate style/template.
